Classic Pancakes

2 cups flour

¾ cup sugar

2 tablespoons baking powder

1 pinch salt

3 eggs

1 ¼ cups milk

  • Stir dry ingredients together completely.
  • In separate bowl, mix wet ingredients together.
  • Combine wet and dry and mix well.
  • Cook on a hot griddle and flip when bubbles form and pop on surface.
  • Produces 9 thick fluffy pancakes.

Corned Beef Hash Day on September 27th

Corned Beef Hash

2 tablespoons olive oil

2 tablespoons butter

1 small onion, diced

2 medium potatoes, semi-cooked and diced

1 carrot, semi-cooked and diced

2 cups fully cooked corned beef, chopped up

1 tablespoon fresh chives, chopped

Salt and pepper to taste

  • Heat the oil and butter in a nonstick skillet over medium heat. Add the onion, potatoes, and carrots. Cook until soft, about 5 minutes.
  • Add the corned beef and cook 5-10 minutes, turning occasionally.
